Michelin starred chef Alain Roux has taken up his hotly anticipated residency at Rocco Forte’s iconic The Balmoral hotel. His new restaurant, Brasserie Prince, has opened its doors in the heart of Edinburgh on Princes Street, taking its name from the Scottish legend Bonnie Prince Charlie, otherwise known as “The Young Pretender”.

Drawing strongly from the romantic hero, Brasserie Prince by Alain Roux will combine the very best of Scottish and French cuisine in a fusion menu. The ‘Auld Alliance’ of these two destinations is evident on each plate, from the classic Dover sole meunière to the Scottish côte de boeuf and the locally sourced plateaux de fruits de mer.

Sharing plates at the bar and seafood from the raw bar are also on offer while an adjoining lounge area offers an inviting list of classic cocktails plus a food menu of French snacks, also created by Alain Roux.

The hotel has to the end of a five-year refurbishment plan, overseen by Olga Polizzi, Rocco Forte Hotels’ director of design, which includes the renovation of the signature J.K. Rowling Suite and the Scone & Crombie suite plus the hotel’s Michelin-starred restaurant Number One, Palm Court lounge and famed whisky bar, Scotch.
