Anse Chastanet, the St Lucian resort set on the south western coast by the Piton Mountains, has unveiled a new sustainable seafood dining concept at its iconic open-air Treehouse restaurant to champion sea-to-plate dining.

Soaring high in the treetops across two levels with awe-inspiring views of the crystal blue waters of the Caribbean sea beneath it, the Treehouse restaurant’s mouthwatering new menu, titled Balawoo –  a Creole name for a small fish – features fresh seafood that has been sourced and prepared responsibly, in keeping with Anse Chastanet’s eco-conscious philosophy.

Guests can enjoy a Caribbean seafood feast with dishes including snapper tiradito, lionfish ceviche, wahoo sashimi and the whole fish of the day roasted in banana leaf.

Each dish is served with local Caribbean ingredients grown on the resort’s 600-acre estate while lobster season brings even more decadent fare to the menu – from the world’s largest shrimp to grilled local spinny lobster with passion fruit butter.

The restaurant has partnered with local fishermen and farmers to ensure the coastal menu stays both seasonal and sustainable.
