Fine dining at Waldorf Astoria Maldives Ithaafushi

 

This week’s #foodiegram reaches us from the stunning Maldives where the Waldorf Astoria Maldives Ithaafushi is set to open in July, bringing a 122 all-villa resort to Ithaafushi Island.

Just a 30 minute yacht journey away from Malé International Airport, the new resort will make the island something of a foodies paradise with dining options including an elevated treetop concept at Terra, exceptional food and wine pairings amongst boulders at The Rock and authentic Middle Eastern dishes at Yasmeen.

Also in the mix is the exquisite barbecue grill restaurant, The Ledge by Dave Pynt. The Ledge will feature the chef’s signature custom-built four-ton dual cavity oven and elevation grills fired by sustainable Jarrah wood, which gained Pynt a Michelin star at Singapore’s Burnt Ends restaurant.

Dishes will be created through various techniques including smoking, slow roasting, grilling and baking with signature plates including a 45-day dry-aged beef rib, a grilled whole grouper served with a fresh cucumber and yuzu salad and the popular freshly grilled lobster served in a brioche bun with lobster aioli.
